Ingredients

  • For the Fries
  • 2 lbs frozen extra crispy steak fries or crinkle-cut fries

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • ½ tsp black pepper

  • For the Brisket
  • 1½ lbs smoked brisket, chopped or shredded

  • ¾ cup BBQ sauce

  • 2 tbsp beef broth

  • For the Cheese Sauce
  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 1 cup whole milk

  • 2 cups freshly shredded sharp cheddar cheese

  • ½ tsp garlic powder

  • ¼ tsp onion powder

  • Salt and pepper to taste

  • Toppings
  • 1 cup shredded smoked cheddar cheese

  • ½ cup Monterey Jack cheese

  • 6 slices bacon, cooked and crumbled

  • ¼ cup pickled jalapeños

  • ¼ cup sliced green onions

  • ¼ cup crispy fried onions

  • BBQ sauce, for drizzling

  • Ranch dressing, for drizzling (optional)

  • Chopped fresh parsley

Directions

  • Preheat the oven to 425°F. Toss the frozen fries with olive oil, garlic powder, smoked paprika, and black pepper. Bake according to the package directions until deeply golden and extra crispy.
  • While the fries cook, combine the brisket, BBQ sauce, and beef broth in a saucepan over medium-low heat. Cook for 5–7 minutes until heated through.
  • Melt the butter in a saucepan over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in the milk until smooth. Cook until slightly thickened, then stir in the cheddar cheese, garlic powder, onion powder, salt, and pepper until silky smooth.
  • Transfer the hot fries to a large serving platter or sheet pan. Pour half of the cheese sauce over the fries. Top with the BBQ brisket, smoked cheddar, and Monterey Jack. Bake for 5 minutes, just until the cheese melts.
  • Drizzle with additional cheese sauce, BBQ sauce, and ranch if desired. Top with bacon, pickled jalapeños, green onions, crispy fried onions, and parsley. Serve immediately.

Notes

  • For maximum crispiness, spread the fries in a single layer while baking. Finish off the cook by broiling for a few minutes.
