Ingredients

  • For the Salmon
  • 4 salmon fillets (about 6 oz each, skin removed)

  • 2 tbsp olive oil

  • 2 tsp smoked paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • ½ tsp cayenne pepper

  • ½ tsp kosher salt

  • ½ tsp black pepper

  • For the Lemon Herb Aioli
  • ½ cup mayonnaise

  • 1 tbsp Dijon mustard

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • 1 garlic clove, finely minced

  • 1 tbsp chopped fresh dill

  • 1 tbsp chopped fresh parsley

  • Pinch of salt

  • For the Sandwiches
  • 4 brioche buns, toasted

  • 8 slices thick-cut bacon, cooked crispy

  • 4 leaves green leaf lettuce

  • 8 slices ripe tomato

  • ½ red onion, thinly sliced

  • ½ avocado, sliced (optional)

Directions

  • In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, lemon zest, garlic, dill, parsley, and a pinch of salt. Refrigerate until ready to use.
  • In a small bowl, combine the smoked paprika, garlic powder, onion powder, thyme, oregano, cayenne, salt, and pepper.
  • Pat the salmon dry with paper towels. Brush the salmon with olive oil and coat all sides generously with the seasoning mixture.
  • Heat a large cast iron skillet over medium-high heat. Cook the salmon for 4–5 minutes per side until a dark crust forms and the internal temperature reaches 145°F. Avoid overcooking so the salmon stays moist.
  • Lightly butter the brioche buns and toast them in a skillet until golden brown.
  • Spread the lemon herb aioli on both halves of each bun. Layer with lettuce, tomato, blackened salmon, two slices of crispy bacon, red onion, and avocado if using. Top with the remaining bun and serve immediately.
