These Hot Honey Bacon Brussels Sprouts transform an everyday vegetable into an unforgettable side dish. Ingredients

  • For the Brussels Sprouts
  • 2 lbs Brussels sprouts, trimmed and halved

  • 6 slices thick-cut bacon, chopped

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • ½ tsp smoked paprika

  • 1 tsp kosher salt

  • ½ tsp black pepper

  • For the Hot Honey Glaze
  • ¼ cup honey

  • 1 tbsp hot sauce

  • 1 tsp crushed red pepper flakes

  • 1 tbsp unsalted butter

  • 1 tsp apple cider vinegar

  • For the Garnish
  • 2 tbsp crumbled goat cheese (optional)

  • 1 tbsp chopped fresh parsley

  • Extra red pepper flakes

Directions

  • Preheat the oven to 425°F.
  • Toss the Brussels sprouts with the olive oil, garlic powder, smoked paprika, salt, and pepper. Spread them onto a large baking sheet, cut side down. Scatter the chopped bacon evenly over the pan.
  • Roast for 25–30 minutes, flipping halfway through, until the Brussels sprouts are deeply caramelized and the bacon is crispy.
  • While the vegetables roast, combine the honey, hot sauce, butter, crushed red pepper flakes, and apple cider vinegar in a small saucepan. Cook over low heat for 2–3 minutes, stirring until smooth.
  • Transfer the roasted Brussels sprouts and bacon to a serving bowl. Drizzle generously with the hot honey glaze and toss until evenly coated. Top with crumbled goat cheese if using, chopped parsley, and an extra pinch of red pepper flakes. Serve immediately.

Notes

  • Adjust the amount of hot sauce to make the glaze milder or spicier.
