Ingredients

  • For the Salad
  • 2 ripe peaches, halved and pitted

  • 1 tbsp olive oil

  • 5 oz spring mix

  • 8 oz burrata cheese

  • ½ cup candied pecans

  • ¼ cup thinly sliced red onion

  • ½ cup cherry tomatoes, halved

  • Fresh basil leaves

  • Fresh cracked black pepper

  • For the Hot Honey Balsamic Dressing
  • ¼ cup extra virgin olive oil

  • 2 tbsp balsamic vinegar

  • 1 tbsp hot honey

  • 1 tsp Dijon mustard

  • 1 tsp honey

  • 1 garlic clove, grated

  • Pinch of kosher salt

  • Pinch of black pepper

  • Optional Garnishes
  • Balsamic glaze

  • Flaky sea salt

  • Microgreens

Directions

  • Preheat a grill or grill pan to medium-high heat. Brush the peaches with olive oil. Grill cut-side down for 3–4 minutes until grill marks form and the peaches begin to soften. Slice each peach half into wedges.
  • Whisk together the olive oil, balsamic vinegar, hot honey, Dijon mustard, honey, garlic, salt, and pepper until emulsified.
  • Arrange the spring mix on a large serving platter. Scatter the grilled peaches, cherry tomatoes, red onion, and candied pecans over the greens. Tear the burrata into large pieces and place throughout the salad. Drizzle generously with the dressing. Finish with fresh basil, cracked black pepper, flaky sea salt, and a drizzle of balsamic glaze if desired. Serve immediately.

Notes

  • Use peaches that are ripe but still firm so they hold up on the grill.
  • Burrata should be served at room temperature for the creamiest texture.
