These Blackberry Cobbler Bars are a delicious twist on the classic Southern dessert, combining a buttery shortbread crust, a sweet and juicy blackberry filling, and a golden crumble topping in every bite. Finished with a simple vanilla glaze, these bars have the perfect balance of tart berries, rich buttery flavor, and soft, crumbly texture. They’re easy to make, simple to serve, and perfect for summer cookouts, holiday gatherings, potlucks, or whenever you’re craving a homemade fruit dessert.

Ingredients

  • For the Blackberry Filling
  • 4 cups fresh blackberries

  • ½ cup granulated sugar

  • 2 tbsp brown sugar

  • 2 tbsp cornstarch

  • 1 tbsp lemon juice

  • 1 tsp vanilla extract

  • ½ tsp cinnamon

  • Pinch of salt

  • For the Cobbler Crust & Crumble
  • 2½ cups all-purpose flour

  • 1 cup granulated sugar

  • 1 tsp baking powder

  • ½ tsp salt

  • 1 cup unsalted butter, cold and cubed

  • 1 large egg

  • 1 tsp vanilla extract

  • For the Vanilla Glaze (Optional)
  • 1 cup powdered sugar

  • 2 tbsp heavy cream

  • ½ tsp vanilla extract

Directions

  • Preheat your oven to 350°F and grease a 9×13-inch baking pan.
  • In a bowl, gently toss together the blackberries, granulated sugar, brown sugar, cornstarch, lemon juice, vanilla, cinnamon, and salt. Set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Mix in the egg and vanilla until a crumbly dough forms.
  • Press about two-thirds of the dough firmly into the prepared baking pan to form the crust.
  • Spread the blackberry filling evenly over the crust.
  • Sprinkle the remaining dough evenly over the berries to create the cobbler topping.
  • Bake for 40–45 minutes, or until the topping is golden brown and the blackberry filling is bubbling around the edges. Allow the bars to cool completely before slicing.
  • Whisk together the powdered sugar, heavy cream, and vanilla until smooth.
  • Drizzle over the cooled bars before serving.

Notes

  • Fresh blackberries provide the best texture, but frozen berries work well without thawing.
  • Store leftovers in the refrigerator for up to 4 days.
