This French Onion Beef & Noodle Skillet transforms the rich, savory flavors of classic French onion soup into a hearty one-pan dinner. Tender egg noodles are tossed with seasoned ground beef, sweet caramelized onions, and a rich beef broth before being topped with melty Gruyère, mozzarella, and Parmesan cheese. Finished in a cast iron skillet until hot and bubbly, this cozy comfort food recipe is perfect for busy weeknights and guaranteed to become a family favorite.

Ingredients

  • For the Beef & Noodles
  • 2 tbsp butter

  • 2 tbsp olive oil

  • 2 large yellow onions, thinly sliced

  • 4 cloves garlic, minced

  • 1½ lbs lean ground beef

  • 2 tsp Worcestershire sauce

  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)

  • ½ tsp onion powder

  • 1 tsp kosher salt

  • ½ tsp black pepper

  • 4 cups beef broth

  • 8 oz wide egg noodles

  • 1 tbsp balsamic vinegar

  • For the Cheese Topping
  • 1½ cups shredded Gruyère cheese

  • ½ cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • For the Garnish
  • Fresh parsley or thyme

  • Fresh cracked black pepper

Directions

  • Heat the butter and olive oil in a large cast iron skillet over medium heat.
  • Add the sliced onions and cook for 18–20 minutes, stirring occasionally, until deeply caramelized and golden brown. Add the garlic and cook for another minute.
  • Push the onions to one side of the skillet. Add the ground beef and cook until browned, breaking it into crumbles as it cooks. Drain any excess grease if needed.
  • Stir in the Worcestershire sauce, thyme, onion powder, salt, and pepper.
  • Pour in the beef broth and balsamic vinegar. Bring to a gentle boil.
  • Add the egg noodles and stir well. Reduce the heat to medium-low, cover, and simmer for 10–12 minutes, stirring occasionally, until the noodles are tender and most of the liquid has been absorbed.
  • Sprinkle the Gruyère, mozzarella, and Parmesan evenly over the skillet. Cover for 2–3 minutes until the cheese is melted. For a golden top, place the skillet under the broiler for 2–3 minutes.
  • Garnish with fresh parsley or thyme and serve immediately with crusty French bread for soaking up every bit of the sauce.

Notes

  • Take your time caramelizing the onions; they’re the key to authentic French onion flavor.
  • Freshly shredded Gruyère melts much better than pre-shredded cheese.
  • Add sautéed mushrooms for an even heartier version.
